It was about this time last year that I began imagining our shop. We had submitted our producers application to the department of health and were waiting for approval or denial . Anxiously, anxiously, awaiting. We had to have a retail location already identified for our application. . We had settled on at least four locations that had fallen through due to regulations . We were in a crunch at the end . One specific underserved area in our sites . And then ……..A Diner. In our desired neighborhood ,An odd shaped elliptical building with checkered floors and ketchup and mustard walls. Odors of old French fries and malted milk sealed the deal for us . This building had soul. A vibe that can be altered but the mood would never change… Happy …. Happiness and happy . That was it .
